Field Notes

Small observations on cooking, walking, and reading.

Slow bread, fast mornings

A cold overnight proof does most of the work. By breakfast the dough has developed enough flavour that the bake itself is the only thing left to think about.

Walking the coast in autumn

Fewer people, softer light, and the tide tables matter more than the weather forecast. Pack a thermos and leave the headphones at home.

Rereading old notebooks

Most of what I wrote down was wrong, but the questions were good. Keeping the questions seems to be the useful part.
